Recipe for Elven Lembas or 'Waybread'
This was one of Galadriel's gifts to the fellowship when they departed from Lothlorien in The Lord of the Rings. Frodo Baggins and Sam Gamgee eat lembas bread throughout much of their journey to Mordor. It was said to be very nutritious, and would stay good for months when wrapped in mallorn leaves.
'One small bite is enough to fill the stomach of a grown man,' Legolas told Merry and Pippin Took in The Fellowship of the Ring.
"Eat little at a time, and only at need. For these things are given to serve you when all else fails. The cakes will keep sweet for many days, if they are unbroken and left in their leaf-wrappings, as we have brought them. One will keep a traveler on his feet for a day of long labour, even if he be one of the tall men of Minas Tirith." - The Fellowship of the ring.
This recipe might not be able to fill your stomach with one bite, nor stay good for a long time, but it is really good!
Ingredients:
2 sticks of butter
2 cups all-purpose flour
3/4 cup powdered sugar
1/2 teaspoon baking powder
1 teaspoon vanilla extract
1/4 teaspoon almond extract (optional)
1/4 cup pureed almonds (optional)
1 tablespoon honey (optional)
Directions:
1. Preheat oven to 325 degrees Fahrenheit. line a 9X13 inch pan with parchment paper.
2. In a small bowl, combine flour, sugar, baling powder, and almonds (if using). Stir well.
3. In a large bowl, combine butter, honey (if using), almond extract (if using), and vanilla extract. stir until combined.
4. Slowly add flour/sugar mixture into butter mixture, kneading with your hands until well blended.
6. Bake 20-25 minutes, until fork comes out clean. Do not over bake.
7. Cool for 10-15 minutes, then cut into squares.
8. Enjoy!
